Third and Fourth Dinners

Well, we didn’t end up going out to dinner last night. Bummer. But we didn’t starve or choke on cardboard tasting rice either. I made twice baked potatoes (pretty hard to screw up) and they were pretty good. Not great, but good. Too much broccoli. Then tonight I made White Chicken Chili for dinner and I am happy (and thankful) to let you know that it was also a success. It appears we are all going to be okay. I’m thankful.

    Sounds like you’ve got the momentum building now! Two good dinners and more easy ones to come. You might try mac and cheese, from scratch no box. Just one package of macaroni, one can of cheddar cheese soup and 2 cups shredded cheddar cheese. Cook the macaroni. Drain and put it in a large casserole dish. Add soup and mix thoroughly. Add half the cheese and mix thoroughly. Add remaining cheese on top. Cook at 350 degrees for 1/2 hour, or until thoroughly heated. If you like a crispy cheese crust on top, cook it longer – just until the cheese on top looks golden with a hint of brown on the edges. Devour! Yummy! Of course, if you want to spice it up, you can add garlic powder or paprika and chili powder. Good luck with upcoming dinners. I look forward to your updates.
